Let's talk Brew Analysis

What are the numbers in our Kombucha?

I trust my gut and tastebuds! I am also a big fan of professional analysis.

We've been working with Cultured Analysis to get our brew tested and balanced just right.

I know many of you are concerned about sugar content, calories and ingredients. I'm happy to see people paying attention to the labels and I'm happy to share Blanco Booch's analysis with you.

These are a few examples of our different flavors. When using other fruits, I stay at these sugar levels or lower.

I had the analysis run on a 12 oz serving. Many people chose to consume only 8 oz or less. I am delighted that my brew is considerably lower in sugar than many other brands - 50% lower in many cases! The sugars are balanced nicely. Glucose is a simple sugar that cannot be broken down into a simpler compound. It's our body's preferred carb-based energy source. Glucose can be used right away for energy as it is directly absorbed into our bloodstream primarily in the small intestine.

Fructose is also a simple sugar from fruit. It is the sweetest tasting but has the least impact on our blood sugar. The liver needs to transfer it and then it is converted to energy.

Sucrose must still be broken down into simple sugars (glucose and fructose) before absorption. The energy from that sucrose sugar kicks in a bit later.

This all helps me with the reviving pick-me-up I get from Kombucha in the late afternoon.

Alcohol By Volume (ABV): Kombucha generally has trace amounts of alcohol, but I wanted to make sure we had a cushion under 0.5, which is considered legally non-alcoholic.

I am pleased that we are comfortably under the legal limit with our highest at 0.29 Blueberry Basil and even shown none in the Lemongrass Lavender 0.00.


I am excited to see a small amount of protein in our Kombucha!

There are almost 3 grams of protein in the Blueberry Brews. This is an added bonus of nourishment for the body and speaks to the health and uniqueness of our brew.


The beneficial acids bring the health benefits. They are powerful probiotics that enter our intestines and improve our gut flora, boost our metabolism, chase down those free radicals in our body and work with our lymphatic system to gently detox the body.


Blanco Booch contains several kinds of beneficial acids: Gluconic Acid 14.9 (mM), Acetic Acid 67.9 (mM), and Lactic Acid (trace amounts).

We like to see all 3 present and a nice balance. Acetic Acid is the most known acid, that is the one with more of a stringent profile. Gluconic acid still packs the same healthy punch but is a sweeter-tasting acid. Also, the percent % of acid in the brew makes a big difference.

John at Cultured Analysis shared with me that he has tested over a 100 Kombucha brews and has discovered there is a percentage sweet spot where all the synergy of the Kombucha interacts and enhances the combined effects of a brew. The percentage spot is between 30-50% acidic level in Kombucha.

Our Blanco Booch is nicely sitting at 43% acid, and I am thrilled with that level.

As we grow and expand, we are committed to maintaining the beautiful balance of our brew.


Remember, at Blanco Booch, we use only Texas Natural Spring Water from a protected source and organic raw cane sugar in our Kombucha.  

We go the extra mile to juice our fruits in-house for the second fermentation. 

No added filtered water or preservatives are used.
