Christmas is quite close now, and there are so many projects I want to complete before it arrives.
I've already started a couple of them, like my Christmas baking.
Last year, I tried some new recipes, and this year, I'm adding two more. As well as the new recipes, I wanted to bake some egg-free and dairy-free (1) treats.
That was easier than I thought, as I mainly used the recipes I already had. All I needed to do was change some of the ingredients (2). However, I learnt some fascinating things, like you can make macaroons without using egg whites!
I'm curious and want to try the recipe and see what they're like. Given the other things I want to do before Christmas, I don't think it'll happen this year.
The other thing is I need to find a reason to bake them - I don't want to be the one who eats them all!
Some low-carb recipes for diabetics are also on my 'To Do' list. That's a bit more complicated. Thanks to the internet, I have collected some recipes. I haven't baked anything yet - that'll happen in the next week or so.
The baking has a definite deadline, but I have a couple of other projects that are more open-ended.
Like the cardigan for my youngest niece. The knitting is going well, but if it's not quite finished by Christmas, that's OK - she won't wear it until March or April next year. I would like to have it finished and wrapped (3) ready for Christmas, but it'll be OK if I'm a couple of weeks late.
Then there's the little dress I want to sew for the same niece (I'm just making sure she has some 'girly' clothes as the last few babies in the family have been boys!). The idea is there and I know it'll happen quickly when I start, but I haven't even bought the fabric (4) yet!
I think I can do it, but maybe I need a Plan B, just in case.
How are your preparations for Christmas going, ? Is everything organised?
